The recent development of the low-calory sugar substitutes is to be considered in an evolution sweeteners market context characterized by a process of substitution of the agricultural products (sugar, corn sweeteners). This situation reflects the intensification of the competition at international level among the concerned big industrial groups. In particular, the commercial success of the aspartame had an acceleration effect on this process. At the same time, the innovation process of this sweetener was also influenced by the context of competitivity.Downloads
