The Federal District consumer of bovine meat represents the central point of this study. The aim, above all, is to establish the consumer socioeconomic profile, as he would pay for the product and which attributes of value would make him to pay more. To obtains answers, consumers and buyers of bovine meat were interviewed in several points of the Unit of the Federation. Among the most relevant results was a great variation of the value paid for the meat among the consumers of groups of Administrative Areas groups with socioeconomic similarities, although in all of them the consumers consider the price too high. The women show larger disposition than the men in paying more for the second class meat and special cuts. There is practically no interest of consumers in paying more for any attribute of value added to the bovine meat, although the presence of a quality stamp and the warranty of a tender meat can be attractive, even with a differentiated price.Downloads
