Abstract

The total and protein nitrogen contents in white musts of the 1972 and 1973 vintages of Bento Gonçalves, Rio Grande do Sul, Brazil, were investigated. Of the 50 musts from the 1972 vintage examined, the total nitrogen content varied from 56.8 to 326.0 mg per liter, with a mean of 174.7 mg per liter. In the same year, the protein nitrogen content varied from 8.4 to 34.4 mg per liter. Of the 97 musts from the 1973 vintage examined, the total nitrogen content varied from 85.8 to 436,8 mg per liter, with a mean of 210.9 mg per liter. In the same year, the protein nitrogen content varied from 11.2 to 43.9 mg per liter.
