Abstract

Sugar innovations history emphasizes the relationship between technical, productive and social systems. Sugar production - an evolutionary cultural, food and industrial commodity - induces simultaneous uses of a large range of paradigms. It reflects the diversity of social organization made of economic conflicts and social agreements. Sugar innovation variety is more a product of a long term history than a direct output of scientific or technical breakthrough.
