Abstract

Brazil plays a significant role in the animal protein market in the world, a path that has been traced for many years. Therefore, this research aimed to assess the impact of income on the consumption of meat, offal, fish, poultry, eggs, milk and dairy products in the five major regions of Brazil over time. For this purpose, data from the Brazilian household budget survey (POF in Portuguese), carried out by the Brazilian Institute of Geography and Statistics (IBGE in Portuguese) in the periods 2002-2003, 2008-2009 and 2017-2018 were used, using the weighted least squares method and, as a weighting factor, the population in each income bracket. It was found that all regions have data in common, such as the highest average elasticity for the group of milk and dairy products. However, there are differences regarding the higher expenditure of certain proteins, as occurs for fish in the Northern Region of Brazil. In the other regions, the highest one was for prime beef.
