Coffee substitute from Prosopis juliflora D. C.

The chemical composition and the acceptance of the coffee substitute from Prosopis juliflora D.C. were assayed. The spectra had a strong identification with the curve for genuine coffee, and a decaffeinated coffee range in caffein contents. The nitrogen absence in the aqueous extract revealed that there is no toxidity due this element. Drink flavor had a good acceptance in sensory evaluations.Downloads
